This morning I had pop tarts for breakfast. Bad bad. I also had some coconut water with pineapple, one of my new favourite drinks. Lunch I had a salad with chicken and green beans. I forgot to take a picture. It was so nice and hot out I couldn’t resist and I got myself an iced coffee after work. And for dinner! I had pasta-less pasta! Spaghetti squash. I loooove this stuff. I hope it isn’t a wintery season vegetable cause it would be so good for the summer too. I added in lean turkey meatballs, cherry tomatoes, spinach and peppers. The sauce is half basil pesto and garlic Alfredo and I added in some coconut milk to thin it out a bit. I need to find a dairy free version of Alfredo cause my stomach wasn’t too happy with me. I think I might make the dairy free version I’ve made before and freeze it so it can still be an easy and convenient meal. -- source link
