My contributions to Easter dinner yesterday, One was Mac and cheese, which was all bad for you lol, although I did make it with coconut milk so I guess it’s a smudge more healthy. My healthy contributions were quinoa salad, it’s one of my favourites of mine. It’s always a hit! I added grapes this time for a sneak peak of summer flavours. And for my niece who can’t have any dairy, and is always left with barely anything to eat because hardly anyone realizes how easy it is to substitute milk! I made mashed sweet potatoes with shredded kale and goat cheese, and instead of milk I used coconut milk. And goats milk is okay for her to eat. Really good, and super easy to make. -- source link
