working-class-vegan: Barbecue Mock Duck with Spiced Sweet Potatoes and PeasThis was such a satisfying meal I just had to share it with you guys! If you have an Asian market near you, you might already know about this fabulous stuff called “mock duck,” which is essentially textured and seasoned seitan that comes in a can. Each serving has 11g of protein, and it easily takes on the flavor of any seasoning or sauce you cook it with. I get mine for $1.69 a can at my local market, but if you don’t have any Asian markets near you, fear not! It is also available at many online Asian grocery sites. Here’s one I found for $1.99 a can! There are a few different brands out there, but mine looked like this:So here’s how I made this whole meal:BBQ Mock DuckDrain it really well, then put it in a baking pan and cover it with your favorite barbecue sauce. Bake at 350F for about 25-30 minutes. Sweet PotatoesBake, microwave, or boil about 3 or 4 sweet potatoes until they are soft, then skin them and mash them. Add salt, pepper, garlic, onion powder, paprika, and cayenne pepper, If you have it available, try adding some smoked paprika, nutritional yeast, and/or garam masala. PeasThis one is easy. Just get a bag of frozen peas, heat them up in a pot, then add whatever spices you like. I like to keep mine simple, so I just add salt and pepper and maybe a little vegan butter if I have it. They’re also really good with bacon bits made out of TVP. And that’s about it. it only takes about 30 minutes to make, costs about $4 and can feed up to 4-5 people. Enjoy! -- source link
