sweeterthanabumblebee: last night!! vegan sweet potato black bean quesadillas using @daiyafoods shreds and guac on the side with extras to spare for leftovers i am emotional •• peeled and cut up 2 sweet potatoes into chunks, then drizzled w avocado oil, smoked paprika, cumin, cayenne pepper, + s/p, mixing to coat. roasted them at 425 for 30-40min until they were super soft. allowed them to cool and smashed them in a bowl. then took a tortilla brushed it w oil and placed on a griddle oil face down. spread half the sweet potato mixture, ¼ can black beans, a handful of daiya cheese, a squeeze of lime juice, and a tiny bit more of s/p. then placed a second tortilla on top, pressed down gently, and lightly brushed the top with more oil. turned on the griddle to medium heat and fried for prob 7 min on each side! -- source link
