thisismycleanlife: Almond Joy Granola (From DashingDish.com) Ingredients 2 1/2 cup Old fashioned oats 2 tbs Coconut oil OR butter, melted (I used Smart Balance butter) 1 tsp Coconut extract ¼ cup Baking stevia OR ½ cup sweetener that measures like sugar 1 1/8 cup Honey 1/8 cup Egg whites (or egg whites from a carton) 1 tsp Baking powder Pinch Salt (or to taste) ½ cup Coconut flakes ¼ cup Mini chocolate chips (or chopped dark chocolate) Optional: 1/2 cup sliced almonds, ¼ cup white chocolate chips Method Preheat oven to 350 degrees. Line a baking sheet with foil or parchment paper. (If using foil, spray with non-stick cooking spray). Mix all of the ingredients together in a medium sized bowl, (except for the coconut and chocolate chips) and stir until everything is well combined. Bake for 15 minutes, then remove from oven and stir to break granola apart. Add coconut. Return to the oven for another 15-20 minutes, or until granola is crisp. Let cool completely, and add chocolate chips (and almonds/white chocolate chips if using). Store in an air-tight container for up to 7 days.
