letscookvegan: Tomato pasta with Burrata and Basil by @alenafoodphoto The recipe: In a large sauce pan heat 2 tablespoons of olive oil, add minced garlic (1 glove) and cook for a minute, then add halved grape tomatoes ( 15-18 pieces) and cook for 5 more minutes. Meanwhile cook pasta in a separate bowl for 3 - 4 minutes (al dente ). Reserve some water from pasta. When tomatoes are pretty soft, add 2-3 tablespoons of white wine and ½ cup of tomato paste, sauté for a couple of minutes. Then add pasta, stir to combine and cook a little bit more, adding the reserved water one tablespoon at a time until the pasta is ready. Add some Parmesan cheese to taste, basil and Burrata.
