Saag AlooA really simple potato, chickpea, and spinach curry. The base is straightforward and you can easily add/remove ingredients as you like. I’d nearly run out of spinach so there’s not much in my photo, but don’t be afraid to add a lot to yours as it really reduces in size when cooked!Ingredients3 Medium Potatoes1 Tin of Chickpeas1 Bag of Spinach2 Green Chillies1 Small Piece of Ginger, Diced1 Onion, Diced2 Cloves Garlic, Diced2tsp Cumin2tsp Coriander Seeds2tsp Tumeric1tsp Chilli Powder1tsp Coriander Leaf300g Passata (chopped tomatoes is also fine)2 Limes, JuicedSalt and Pepper to TasteSkin and chop the potatoes into large chunks, then boil in water on a high heat for five minutes, just so they begin to cook but aren’t crumbly. Drain and set aside.In a deep pan, fry the onion on a medium heat for a few minutes until browning, then add the garlic, ginger, chillies, herbs, and spices, and fry for a minute or two more until they’re aromatic. Add the potatoes, chickpeas, passata, and a little water so the mix isn’t too dry, and simmer for 10 minutes.Stir in the spinach and cook for a few minutes until it’s wilted. Add the lime juice and salt and pepper to taste and serve! -- source link
