Good morning! Last night I decided to use up the sweet potatoes that had been hanging in my fridge for almost a week. My original plan was to make sweet potato fries, but I went for a healthier option. Wasn’t exactly sure if sweet potatoes were able to be consumed raw, but after researching, I found out it’s perfectly okay! (15 minute) Raw Sweet Potato Soup with Pear Cashew Cream- For the soup, add in a blender (most blenders won’t break down sweet potatoes. I use a Vitamix and it works perfectly. That thing will chop up rocks if you needed to!) - -3 sweet potatoes, peeled and chopped into small pieces -1 garlic clove -3 dates -handful of spinach -3 cups of hot water -½ tsp (Braggs) kelp seasoning For the cashew cream, mix in a food processor (separate from your soup mix)- -½ cup cashews, previously soaked for an hour to soften -½ cup coconut milk -½ cup raw sunflower seeds -½ pear Pour soup in bowl and add your delicious cashew cream. Enjoy chilled. :) I love raw soups because they’re so much more nutritious than cooked soups and SO darn simple to make! -- source link
