Sunday feast: Save-On Foods was having a 2-for-1 sale on 4-pound prime rib roasts, so I went for it. This is something I might cook once or twice per year with family or friends over. I made a spice rub using mortar and pestle, with cumin seeds, peppercorns, star anise, cayenne, sugar, salt, onion powder, garlic powder. A few sprigs of garden thyme for aroma. Into the oven at 220°F for 6 hours – low and slow – to reach the safe USDA-recommended internal temperature of 145°F, which is a beautiful medium rare all the way through. Served with salad and potatoes, and enjoyed with lots of horseradish and red wine sauce made using drippings. Carnivore heaven. -- source link
