tomato and cheese risotto! recipe: makes 3 servings 1 tablespoon of butter & oil 1 ½ cans of canned tomato (400g per can) Ketchup 3 cubes chicken stock (not joking) 250g arborio rice Pinch Salt & pepper 1 onion 3 garlic cloves Chopped basil 1/2c grated parmesan. Chop onion & garlic. Heat saucepan w/ oil & melt butter, fry the onion and garlic until cooked and add the canned tomatoes and add a few dashes of ketchup. Add the risotto rice and add the chicken stock. Season with salt and pepper and basil. Add some water once in a while to let the rice soak in the liquid. Keep it at high heat and keep on stirring or else the rice will stick. Cook the rice, keep on adding water, until the rice is fully cooked and soft. Turn off heat.
