pasta with sweet potato and vegan cream saucerecipe under the cut!INGREDIENTS:for the sauce:2 tbsp vegan margarine1 white onion, chopped4 cloves garlic, minced1 tsp mustard seeds, or 1 ½ tsp ground mustard1 tsp salt, or to taste½ tsp ground black pepper, or to taste1 whole nutmeg, grated, or 1 ½ tsp ground nutmeg2 tbsp flour3 cups unflavoured soy or other non-dairy milksmall bunch of fresh parsley2 tsp nutritional yeast or ¼ cup vegan parmesan (optional)for the sweet potatoes:1 large or 2 small sweet potatoes½ cup fresh spinach, chopped (optional)~3 tbsp olive oil½ tsp salt½ tsp ground black pepper½ tsp ground maceINSTRUCTIONS:for the sauce:1. heat margarine in a sauce pot over medium until cold water sprinkled into the pan sizzles. add mustard (if using whole seeds) and cook for a few minutes until they start to ‘jump’. add onion and salt, pepper, and mustard (if using ground) and cook for about five minutes, stirring occasionally, until soft and translucent. add garlic and cook for another three minutes until fragrant.2. add flour and stir until well incorporated. add 1 cup non-dairy milk and cook until simmering (don’t allow it to come to a rolling boil). add the remaining milk and return to a simmer, then lower heat to medium-low. cook, stirring occasionally, until sauce thickens.3. wash parsley in a bowl of cool water and chop. add parsley, nutmeg, and nutritional yeast or cheese and stir to combine. taste and adjust spices. remove from heat.for the sweet potatoes:1. peel sweet potatoes and chop into small cubes. place (along with spinach) in a large bowl and coat with the oil and spices.2. sauté sweet potato in a large pan over medium for a few minutes, or spread out on a cookie sheet and roast in an oven heated to 430 F / 220 C for 30-45 minutes, turning often, until soft and lightly browned. if sautéing, you may need to work in multiple batches to avoid overcrowding the pan. add spinach when the sweet potatoes are mostly done and cook until wilted.to assemble:1. cook 1lb. / 500g of pasta in salted water according to package directions. drain and rinse with cold water to halt cooking.2. top with the cooked vegetables and cream sauce. -- source link
