look at this handsome devil.i was concerned about the outer bird being overdone by the time the inner bird was cooked through (even though they’re small!), so after i filled the inner one with mushrooms, i tied it up and poached it. out of nervousness that it would end up greasy and soggy, i seared it afterward to render out most of the subcutaneous fat. then put it inside the bigger bird and roasted at 400F for an hour.and i mean, it’s a big pile of tender meat that tasted like juniper and rosemary and mushrooms and we inhaled it, and now i am confident in my ability to bone birds of various sizes without accidentally shattering the wishbone or ribs, so my future is wide open. next time i will put more than a few hours of forethought into it and find more interesting-tasting birds. -- source link
