More fun with the deep-fryer: who doesn’t like fried chicken, right? To quote chef David Chang, “If you don’t like fried chicken, I don’t trust you.” After the successful chicken nugget experiment the other night, I went back to basics on this one. Drumsticks marinated overnight in buttermilk, cayenne, spices. Breaded with flour and bread crumbs; the key is to allow the breading to set for 30 minutes, so the crust and skin bind properly and won’t come off the meat in one giant slab when you take a bite.
