My favorite part of the day is standing here. The rhythm of chopping and tending to a dish is better than therapy I swear. I love being aware of the ingredients and the way they change as they cook. Sometimes cooking is more exciting to me than the eating, but I love both, let’s be honest. Tonight it is winter veggie risotto made with our chicken stock (yeah that chicken from last week!) and lots of Tuscano kale, mushrooms, and leeks. I love risotto especially in the winter and fall. It is such a fun dish to make. I also am working on some recipes for every season we can cook that simple and fresh so it is even easier for us to enjoy what each season offers us.
