Lemon & Vanilla Tarts Cases: • ½ cup of almonds • ½ cup of pecans • 2 tbsp of desiccated coconut • 1 cup of medjool dates • 1 ½ tbsp of coconut oil • ¼ tsp vanilla extract • pinch of sea salt LemonFilling: • 1 cup of raw cashews (soaked in boiling water for 15mims to soften) • ½ cup of coconut cream • ¼ cup of fresh lemon juice • zest of 1 lemon • 1 tbsp of maple syrup • ½ tsp of vanilla extract Method: • blend nuts until fine and place into a bowl • blend medjool dates until a paste forms and add to bowl with nuts • add remaining ingredients and mix together until well combined, may need to use hands! • press into tart cases or a small muffin tray • refrigerate while making filling • add all ingredients for filling to blender and blend until smooth and creamy • add filling to cases and refrigerate for 2 hours or until set! -- source link
