All about the easy/lazy meals ✨ Sourdough topped with mashed avo, baba ganoush, eggs, dill and parsley, chilli flakes and EVOO. Pretty damn good if you ask me. Baba ganoush recipe: 2 large eggplants 2 garlic cloves ¼ c tahini 3 tbsp olive oil 2 tbsp lemon juice Pinch of smoked paprika Salt to taste. Parsley to garnish (optional) Slice the eggplants in half and roast at 200 degrees Celsius for about 60 minutes or until very tender. Scoop out the flesh (discard the skins) and drain for about 20 minutes.
