Roast Potato Stacks Ingredients: 1 large potato Olive oil Paprika Method: Using a cookie cutter, cut a core out of the potato and slice into thin strips. Thread each strip onto a wooden/metal skewer and leave a small gap between each slice. Brush with a mix of olive oil and paprika. Bake at 200°C for 40 minutes, turning occasionally and brush with more oil and paprika. Thread a sprig of rosemary through the strips and serve. -- source link
