Mocha Cake Ingredients: 3 oz. fine quality semisweet chocolate 1 ½ cups hot brewed coffee 3 cups sugar 2 ½ cups all-purpose flour 1 ½ cups cocoa powder 2 tsp baking soda ¾ tsp baking powder 1 ½ tsp salt 3 large eggs ¾ cup vegetable oil 1 ½ cups well-shaken buttermilk ¾ tsp vanilla Instructions: Preheat oven to 300˚. Grease and line cake pans with shortening and parchment paper. Finely chop chocolate and combine in a bowl with the hot coffee. Let the mixture stand, stirring occasionally, until the chocolate is melted and mixture is smooth. In a large bowl, sift together sugar, flour, cocoa powder, baking soda, baking powder, and salt. In another large bowl, beat eggs until thickened slightly and lemon-coloured. Slowly add oil, buttermilk, vanilla, and melted chocolate mixture, beating until combined well. Add sugar mixture and beat on medium speed until just combined well. Divide batter between cake pans and bake in the middle of the oven for about 50-60 minutes. -- source link
