This bread can be made using one person, or two, by alternating who adds the ingredients and who kneads the bread. Ingredients:1 cup warm water (100-110 F)1 Tbsp. organic cane sugar2 tsp. active dry yeast1 tsp. salt2 Tbsp. fresh rosemary, chopped (or 2 tsp. dried)¼ tsp. Italian seasoning¼ tsp. freshly ground black pepper2 Tbsp. extra virgin olive oil1 1/2 cups white whole wheat flour½ cup bread flour + extra for kneading1 egg, whisked + 1 Tbsp. water, for egg washdried rosemary, for sprinkling Bone’s Directions: In a large bowl, combine the warm water, sugar, and yeast. Let sit 10 minutes to proof. The top of the water should be foamy when the yeast is activated. As you wait for it to activate, start thinking about the type of memories you’re going to want activated by the bread and imagine those memories building in your mind, getting ready to be released. Stir in the salt, rosemary, seasonings, olive oil, and whole wheat flour, imagining that these ingredients are the memories you’re placing into the bread. Add the bread flour and stir until the dough forms a ball, still visualizing those memories. If you’re making the bread with someone else, talk about the memories while you’re adding and stirring the ingredients. Knead on a lightly floured surface for about 5 minutes, adding more flour as necessary to prevent sticking, until elastic. Don’t add too much flour though, the secret to a good, moist loaf is to allow the dough to remain just a little wet and not have all of the water absorbed by the flour. As you do this, imagine those memories building, and rising like the bread will. Place the dough in a lightly greased bowl; cover; and let rise until doubled in size, about 1 hour. Punch down the dough and form it into a round loaf and repeat the visualization process of imagining the memories rising as the bread does. Place it on a cornmeal dusted pizza peel or parchment paper; cover; and let rise until doubled in size again; about 45 minutes. Meanwhile, preheat oven (and pizza stone) to 400 F. Once the dough has risen, gently brush the top with egg wash and sprinkle with dried rosemary (optional). Bake on preheated stone for 20-25 minutes until the top is golden brown and sounds hollow when tapped.
