Along with the corn soup I posted about yesterday, I made a super easy curry for the main dish. I served it over sticky rice from the rice cooker. Ground Beef and Spinach Curry 150g ground beef ½ onion 200g spinach 1 tomato curry powder to taste (I used quite a bit) salad oil Chop the onion finely, the tomato into 1cm cubes, and the spinach into 2-3cm lengths. Heat oil in a frying pan and saute the spinach until it wilts, then set aside. In the same frying pan, saute onions until they grow soft, then add ground beef and brown. Add tomatoes and saute for 1-2 minutes. Add curry powder to taste (I don’t even measure, just give it a few generous shakes), and salt and pepper if it needs it. Saute two or three more minutes, then serve over hot rice. I ate this with the corn soup from my last post, and the whole dinner probably took less than half an hour to make, even with my disorganization and slow chopping. -- source link
