Think what we could do if we’d branch out beyond the Russet Burbank and the little red-skinned thingies and the Yukon Gold! A potato for every occasion! A potato to pair with every wine! A potato for every beer! A potato that goes well when you are drinking Scotch alone in a grim effort to forget that smooth-talking potato salesman that done you wrong! Tiny potatoes! Monstrous huge potatoes! Savory potato! Sweet potato! (but not, y’know, actual sweet potatoes, we have those already and they’re not related.) Potatoes that go with specific cheese! Gouda potato! Brie potato! Potato you hitch a plow to and plow the back forty to make room to grow even more potatoes! …I get a little excited about potato cultivars.WE COULD HAVE 3,000 FLAVORS OF VODKA. There could be vodka tasting contest where the judges delicately swished the vodka around in their mouths and discussed the earthy, vibrant, almost truffle-like qualities of this one and the way the other one “tastes kinda like something you’d siphon out of a truck’s gas-tank."
