BRAUEREI ZUM HIRSCHThis brewery can look back on an eventful history and a long tradition. What started as a small family brewery at the end of the 19th century gradually evolved into a modern specialty brewery. The saga begins when the founder, who at that point leased an already existing brewery, decided to build his own brewery. In the new facility, he had enough space to build a cellar to store the beer. Because an ice cellar had to be available for the production of beer according to Bavarian tradition, he built an ice pond. In the newly built production facility, he operated steam brewing kettles. With the steam from the brewing kettles, the company operated the Linde ice machine purchased in 1908 in an energy-efficient manner. Despite setbacks, inflation and two world wars, the brewery managed to survive. After WWII the last descendant of the founder withdrew from the management of the company. Management was taken over by a trusted family member, who from then on would lead the company for 40 years, together with an experienced lager brewer. After a low point with an annual production of 5000 hectoliters, the company gradually managed to get back on top. By 1950, 35,000 hectoliters were brewed. In 2008, the brewery, which now produces more than 80,000 hectoliters annually, entered into an alliance with a similar specialty brewery.
