Meal prep! What I worked on last week and what I made today. A little different. Last week I made rice with mixed beans (black and some white bean I forgot). They were canned because I didn’t think ahead to soak beans. Though I did soak beans and screwed it all up so I’ll try again next time. Then I boiled sweet potatoes and steamed the bell peppers in the rice cooker. Topped with pepper, lemon, avocado, tapatio, and cilantro. I made 4 batches and had the first for lunch. Today I made lentils, rice, steamed bell peppers of every color, regular and sweet potatoes, and topped with the same. Lemon, pepper, and avocado. I’d like to make salsa to put on but until then, tapatio! I’m hoping this batch comes out just as great as the last! I did cook the potatoes in the crock pot as opposed to boiling. I also added rosemary which I’m not a big fan of. Now I have this and veggie chili (that I made last night and it’s delicious) to eat for the next few days! -- source link
