One of my favorite cookies growing up was the Jelly Strip cookies my Mum and Grandmother made every Christmas. They are a simple buttery cookie with a bit of jelly in the center. The great things about making these cookies are that you can make the dough, form it into the logs and keep it in the fridge until you are ready to bake them and they are baked then cut which is so much quicker than dropped or rolled and cut out cookies.2 cups flour½ tsp baking powder 1/8 tsp salt½ cup (1 stick) butter, softened 2/3 cup sugar 1 large egg1 tsp vanilla Sour cherry jelly (or your favorite jelly) Preheat oven to 350 degrees In a bowl combine flour, baking powder, and salt and set aside. In large bowl, with mixer at medium speed, beat butter and sugar until creamy, 3minutes, occasionally scraping bowl with rubber spatula. Add egg and vanilla, mix until combined, 1 minute. Reduce speed to low; gradually beat in flour mixture until blended. Divide dough into 4 equal pieces. Place each piece of dough o a piece of plastic wrap and roll into a 12-inch-long log and place in fridge for 2 hours.Place log on ungreased large cookie sheet. Pat log into a 1½ inch rectangular strip. With finger or handle of wooden spoon, make a ¼ inch deep indentation lengthwise down center of strip.Repeat with remaining logs of dough. Place dough2 inches apart on cookie sheet. Bake 20 minutes or until golden. With spatula, transfer strips to wire rack.While still warm place small dot of jelly in cookie indentation and spread evenly.Cool about 15 minutes. Then, transfer strips to cutting board and cut each strip diagonally into 1 inch slices. My Mum and I will love these and I am pretty sure that one or two of my jelly-phobic sisters will not so you know what that means…more for me & Mummy. -- source link
