I’m still slowly working through all the tomatoes I pulled out of the garden. Some were turned into relish. Some I have in trays ripening for eating fresh. Many have been given away. And yet I still have far more than I can eat fresh before they go bad. So I’m dehydrating tomatoes so that they will last. I decided against counting them for several reasons. I still have jars and jars of tomatoes from last year, and canning is a lot of work. Dehydrating is much easier and just as useful. This isn’t even all of the tomatoes I still have a half a bucket of green tomatoes to do something with. Maybe more relish, we’ll see. Whatever I decide they won’t be going to waste.
