It was beautiful day in Pennsylvania today and I canned potatoes again. I now have ten lovely pints cooling on my dough board. I could have stored them in wire baskets in my basement as I have in the past but you always have that slight chance that some of them will go bad. This way most of them will be in beautiful condition by the time I get around using them and bonus they’re shelf stable.
