tiredapplestar: Fermented Pickle Chip Recipe Fermented foods and probiotics are in fashion these days. I love them simply because they taste good, and have been making sauerkraut for years, but not everyone is a fan of cabbage. Here is a simple pickle recipe that is loaded with probiotic goodness! ^__^ - several cucumbers sliced thinly - kosher salt - a large pot of boiling water - glass container with lid 1) If you haven’t already, bring a large pot of water to a boil and add a liberal amount of salt. You want the water as salty as the sea. 2) Add the sliced cucumbers to glass a container/containers (I use mason jars). 3) After the salt is dissolved in the boiling water, turn off the heat and ladle over the cucumbers. Making sure they are fully submerged in the water. 4) Cover the container/containers with a loosely fitting lid and let sit at room temperature, out of sunlight for 1 - 7 days. 5) Don’t be alarmed when the water gets cloudy! That is just the probiotics doing their thing. You are going to need to taste them daily until they are as tart as you like them. 6) Once you reach the desired tartness refrigerate and enjoy!
