It was especially important when the Roman Catholic Church required meatless days, and all Southern European cuisines - French, Spanish, Portuguese and Italian - found wonderful ways to prepare the dried fish. That trade has greatly diminished with decline in codfish stocks in the North Atlantic, the church’s relaxation of meatless rules, and Norway’s oil riches. -- source link
