I’ve been wanting to make my own veggie burger for quite some time now. Thought it would be awesome to make a bunch of patties and just throw ‘em in the freezer and pull ‘em out whenever I was too lazy to cook a real meal or something. Turns out, it is awesome! My non-vegan boyfriend even was into it. However he refuses to call it veggie burger, veggie patty is his preferred word choice. Whatever dude, I got you to eat vegan two days in a row… HEHHHH.PS… This does take over night to complete, not same day meal.Ingredients:mushrooms(I used crimini) - about 2 cups garlic - all the garlic in the world, chef’s discretionsweet potato - I used one large onelentils - I used green, probably about 3-4 cupsyellow mustardcumin (obviously)turmeric (duh)salt and pepperProcedure:Sweet Potato- This takes the longest to cook so start it first. Set oven to 375-400 degrees and cook until soft.Lentils- bring water to a boil. Once boiling add lentils and bring down to a simmer. Do not add salt or lentils will turn out hard. I found this out while cooking this dish. Didn’t really matter because I blended everything anyway, but FYI. Simmer lentils until soft.Mushrooms- Chop mushrooms into slices. Doesn’t have to be too thin. Start heating up some oil in a pan. I used coconut oil(duh). Once oil is melted on pan, throw in the mushroom slices. At this point, season mushrooms with spices. This really is up to chef’s discretion as well, my favorite is turmeric and cumin. Maybe a little paprika. I cooked my mushrooms down with a little white wine we had left over from a dinner party. Once the mushrooms are starting to cook down add the garlic and cook this down as well. Once this is all cooked down, just set off to the side.Patty mush paste- Once everything is cooked and soft enough, add all ingredients to a blender or food processor. I used my roommate’s sweet ninja blender. Once ingredients are in blender add some yellow mustard. I just added enough for taste/ to make ingredients blendable. Let blend until desired texture, I just blended mine down into a patty mush paste is really the only way to describe it. Once this blended, put in container and cool in the fridge over night. Cold patty mush paste- Now that the paste has set and is cold over night, it will be possible to make into a patty. Lay down parchment paper on a pan. Preheat oven to 300 degrees. Shape paste into patty shapes and set on parchment pan. Form as many patties that will fit on your pan. Mine held about 5. Once your pan is full let cook in the oven. Mine cooked for about an hour. I would check probably after about half an hour then every ten minutes or so. Since the patties are so wet, the low heat will dry them out and form them into a proper veggie burger. Once patties are nice and dry(but not too dry), pull them out of the oven and let them sit. At this point they can be packed and set in the freezer, or sautéed in a frying pan until slightly crispy.
