If not, as long as you see some viable growths, like those purple sprouts, it’s still a safe horseradish to propagate.There’s no need to plant the whole root. Just cut about 1.5 to 2 inches off the top. You can save the rest for later use. NOTE: always look for a horseradish crown that has MULTIPLE nods so that you can get more starters.Cleave the nods into their own little sections. Set the nods in a small container with enough water to cover about 2/3 of its height. Every 2 days or so, remember to water over all the nods to keep them MOIST as they have a tendency to dry out. Also, warm sunlight always helps.In about 2 to 3 weeks, all the little sprouts will straighten up towards the light and fresh green leaves will start growing. When the sides of the nod start developing a root system, then you are ready to plant!A bit of a late update, but I did get this to work! I transplanted the horseradish into a container and placed it between my potato cages to help deter bugs that might attack the potato plants.However, I really didn’t pay attention to the horseradish so my harvest was pretty pathetic.
