Chocolate Biscotti Cookies for Beginners Ingredients: 2/3 cup dark chocolate or semi-sweet chocolate 1 stick or ½ cup butter 2 large eggs 1 cup sugar 1 teaspoon vanilla extract 2 cups of all purpose flour ½ cup unsweetened cocoa powder 1 and ½ teaspoons baking powder 1 teaspoon salt **HINT: Add 1 tablespoon of instant espresso powder for more rich biscotti! Directions: Preheat your oven to 350°. Melt the butter and chocolate together. (Either in a saucepan or in the microwave) With a mixer, beat the eggs and sugar until combined. (About two minutes) Add the vanilla extract and your chocolate/butter mixture slowly. Mix in the flour, cocoa powder, baking powder, and salt until just combined. **HINT: Your dough should be soft, not sticky. If it’s sticky add just a little more flour until you get the correct results. Divide your dough in half and form each half into a log about 3 and ½ inches by 9 inches. Place each log on a baking sheet and bake for 25-30 minutes until the tops looked cooked. Take them out and let them cool. In the mean time reduce your oven temperature to 275. Slice your logs into ½ inch thick slices.**HINT: Use a serrated knife. Arrange your cookies on the baking sheet and bake for 20 minutes. Flip over cookies and bake for 20 more minutes.
