Cheese & Bacon Loaded Skins Ingredients: 2 baking potatoes. Cheese (I use a cheddar/mozzarella mix). Bacon. Hot sauce. Freshly ground pepper. Method: Bake the potatoes and leave to cool. Cook the bacon until crispy and leave to cool. Cut in half and scoop out the potato (leaving about ½ cm lining). Fill with grated/shredded cheddar/mozzarella. Crush the cooked bacon over the top. Add freshly grated black pepper and a generous dash of hot sauce. Put back into the oven at 180° until the cheese is melted and the top is slightly golden and bubbling. -- source link
