The snow has for the most part all melted away, your cabin fever has gone down several degrees and double digit temperatures begin popping up on the thermometer hanging outside your kitchen window. The birds of spring start appearing and you start being cautious when you let the dogs out for the last run of the night especially when you’ve heard the neighbour’s dog needed a weekend treatment in a tomato juice spa. Whatever your markers are for BBQ season are you just know when the time is right and after a winter of grilling in the snow you’re just excited to fire things up without needing your parka. Chef or not I’m just like any other avid griller and I know exactly the excitement that the prospect of some serious spring grilling can deliver. When you know you’re more than ready to fire things up and you want to welcome BBQ season in style it only makes sense that when it’s time to start thinking about that perfect recipe for the big season opener you might require multiple trains of thought and at least two heads to create something for the grill. When it’s early in the am and you’re thinking about food you might just need a little caffeine to kick start your brain and get the creative juices flowing…luckily I knew just who to call. Dan Dampier from Wolfhead Coffee and I spent some time while there was still some snow on the ground contemplating the perfect BBQ opener for the 2017 spring grilling season. After some serious thought and a whole lot of coffee we knew we wanted to make something deliciously simple. What we came up with was a delicious burger that we could share with you that was not only unique but seriously flavoured with some Northwestern Ontario Tastitude. After a few phone calls and a little shopping we were pretty sure that with our areas of expertise in tow and a veritable stockpile of some amazing local ingredients that we would be able to deliver some seriously happy and wide awake taste buds. So here is our recipe for the 2017 BBQ season opener. Hopefully it will be yours too! – Chef House 2 GUYS Kilted Coffee Burger This amazing burger was the brainchild of Dan Dampier of Wolfhead Coffee and Chef House of EVOT (Evolution of Tastitude) and is a great way to welcome the 2017 BBQ Season! We wanted to make a delicious local burger that truly delivers a NWO eating experience so we found some amazing ingredients right here in our own “backyard” and created something that was mean to be shared. Burger 2 lbs ground beef from Forrest Farm ¼ cup finely diced bacon from Sandy Acres Farm ½ cup finely diced yellow onion from Thunder Bay Country Market 2 eggs + 1 yolk Vanderwees Farm ¼ cup maple syrup Mountain Maple Products 1 teaspoon fresh chopped garlic Thunder Bay Country Market 1 tablespoon chili powder 1 tablespoon Applewood Smoked Coffee Wolfhead Coffee ¼ cup Lifted Kilt Scotch Whiskey BBQ Sauce EVOT ½ cup fresh bread crumb Roma Bakery Salt and Pepper to taste Buns and Toppings 8 bakery fresh hamburger buns George’s Market 1 large yellow onion julienned Thunder Bay Country Market 1 tablespoon butter 1 tablespoon Applewood Smoked Coffee Wolfhead Coffee 8 slices bacon Sandy Acres Farm 8 slices smoked Gouda Thunder Oak Cheese Farm 8 slices fresh tomato 2 cups spring greens Combine all burger ingredients in a large mixing bowl and mix thoroughly by hand. Form into 8 patties then using your thumb make a slight indentation in the center or each burger patty, Refrigerate until very cold or ready to grill. In a medium cast iron pan cook the bacon slices, remove to paper towel and set aside. Add 1 tablespoon of butter to the now empty cast iron pan and add the julienned onion. Sauté over medium heat until slightly caramelized and fully cooked. Stir in 1 tablespoon of Applewood Smoked Coffee and set aside. Grill the burgers over lump wood charcoal on your BBQ or over med/hi heat if using a gas fired BBQ. When almost finished add one slice of the Gouda to each burger. Cut the cooked bacon in half and places 2 half strips on each burger and cook to an internal temperature of 175F and cheese is melted. Place 1 finished patty on each bun topping with sautéed onions, tomato slice and spring greens.
