Amaranth: aka Red Spinach. Another New Superfood. We picked this up at the farmers market last week, just because it was so beautiful. It was marked “red spinach” (one of its common names), but it is also known as amaranth and yin choy (Chinese spinach). Cooking amaranth greens is much the same as cooking spinach, only amaranth has a spicy, almond-like flavor, a better texture than spinach, and is much more nutritious. We purchased a large bundle of beautiful crisp leaves, removed some of the stems (although they are also edible), in preparation for cooking the following week. They held up beautifully for well over a week. I had some wild caught flounder fillets on hand, so I layered them with amaranth, red bell peppers, chives, artichoke hearts, lemon zest and capers. The amaranth leaves made up the bottom layer, and held up beautifully in the oven when baked. I’ll be on the look out for more of these lovely leaves. -- source link
