Peach-blackberry pie. Super-simple butter (not shortening!) crust recipe by Smitten Kitchen, filling improvised (of course) by me.Crust: see above link and follow her instructions to create delicious flaky goodness.Filling:2 fresh georgia peaches, sliced1 pint blackberries, slightly overripe but still technically ediblea couple of spoonfuls of sugara little bit of lemon juice (or extract, if you don’t have a lemon handy or are too lazy to juice your lemon)cornstarchSlice your peaches, eating no more than three slices and smacking the hands of roommates who attempt to do the same. Put them in a bowl and GENTLY add the blackberries, because store-bought blackberries are delicate like woah. In a separate bowl, mix your sugar (amount of which is determined by how sweet your fruit is) with your lemon juice and then gently mix that into your bowl of fruit, making sure everything is evenly distributed.Roll out your chilled crusts, putting one in the pie pan and coating the bottom with a light layer of cornstarch (for juice absorption purposes). Put your fruit in, add your second crust on top, crimp your edges much more nicely than I crimp mine, and poke something kind of suggestive into it with a fork, unless you’re baking for relatives, in which case make an abstract pattern and not a suspiciously ass-like peach, like I did. If you’re feeling fancy, do some shit with brushing egg whites over it to make it shiny or something. Put tinfoil over the very edges to prevent excessive premature browning, and bake for 50 or so minutes at 375 degrees, or until it turns a nice golden brown color, or until your roommates start pestering you asking whether or not it’s ready yet ‘cause it smells so damn good. Remove from oven FOR THE LOVE OF GOD REMEMBER TO TURN OVEN OFF, let cool, smack roommate’s hands when they attempt to skip “let cool” stage, give up after a couple minutes and serve to whiny whiny roommates with vanilla ice cream, whipped cream, or just on its glorious own, that’s okay too.Then leave the remaining half-pie on the counter overnight, covered in tin-foil to deter cats, and let all members of household wage a silent war for it.
