Speaking of real regional Chinese food, that’s me on the right with three of my paternal cousins, during a family pilgrimage to Northeast China in 2001, eating some of the best 饺子 jiaozi in the world at a 500-year-old dumpling restaurant in Harbin, the capital of Heilongjiang province. As we made our way around Northeast China, each meal in each town and village was delicious and distinctive, varying not only by province but by micro-region. In one village, they eat the freshwater crabs which are only found in certain streams; in another, an unusual root vegetable or leafy green which only grows there; in another, fish from the local lake prepared a certain way; and so on. -- source link
