My baby brother came to Fukuoka for a week, and we took him to Hamakatsu to eat katsu! This is what I ordered–the chicken katsu teishoku. It was puzzlingly juicy yet crispy as all hell. Hamakatsu is quite unique in that they let you grind your own goma (sesame seeds) to make your sauce. You spoon the goma into your little bowl and use the wooden pestle to grind it into a powder. To the powder, you add Hamakatsu’s “secret sauce,” and in goes the katsu. This place also has all-you-can-eat rice (white or mugi), miso soup, and tsukemono.
