L A T E | F A M I L Y | L U N CH Ingredients | organic rice noodles , Broccoli, asparagus, corn, baked potatoes, avocado, Mint, chilli, lime, spinach, cucumber, cherry tomatoes and capsicum. How I spent my Australia Day, sitting out side in the garden with my family. Yes there was a BBQ and a lot of potato salad. But it was so easy to make up own healthier alternative to eat at lunch. I honestly cooked everything up 30 minutes before we were ready to eat. I firstly wrapped up the potatoes and corn and put them on the BBQ. I then put my greens in a pan with some water and sat my rice noodles in a bowl of boiling water. While all the cooked components were on I worked on the raw parts. I Cut up one avocado and added fresh mint , one small line and chilli then mixed it all together. I then cut up some raw vegetables for a salad. I grabbed my corn off the bbq and added them to the greens in the pan and added my noodle with a little bit of soy sauce. Once I took the potatoes off the bbq everything was ready.
