fitzsara: Pumpkin CookiesI am SO excited it is finally October, I love all things fall – including anything pumpkin! To kick off the start of fall, I made these pumpkin cookies with brown sugar icing. They were so soft and the icing was the perfect match for these scrumptious cookies.Cookie Ingredients: 4 sticks of softened butter2 cups sugar 2 tsp baking powder2 tsp baking soda1 tsp salt1 tsp cinnamon1 tsp nutmeg 2 tsp vanilla 2 eggs1 15oz can pumpkin4 cups of flour Icing Ingredients: 1 stick of butter½ cup brown sugar¼ cup milk1 tsp vanilla3 cups powdered sugar Ground cinnamon to sprinkle on topDirections: Preheat oven to 350 degrees. In a large bowl, add butter and sugar and beat until mixed. Next, beat in baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla. Next add the eggs and pumpkin and mix. Add the flour 1 cup at a time, and mixed until you have an even batter (and the batter is SOOO good)! Place a spoonful of batter on a greased cookie sheet, and bake cookies for about 12 minutes. This recipe yielded 3 dozen cookies. Place the cookies on a wire rack and let them cool. Next make the icing! Add all of the ingredients into a bowl and mix. Once cookies have cooled, add icing and sprinkle cinnamon on top!! Enjoy! -- source link
