I made one of my favorite summer dishes for you guys tonight on #dinnerserved If you missed it no worries it will be live till this time tomorrow. But here are the recipes I did. Ps. Thanks for letting me hang solo and talk about life and test a new recipe with you Spicy Corn Salad6 cobs of corn¼ cup crumbled feta1 tbsp of rice vinegarZest of 1 limeJuice from 2 limes1tbsp Cholula or other hot sauce 1 handful cilantro Cook the corn either on the grill or in the oven at 400 degrees till cooked. Let cool. Then cut corn from cob and toss with all other ingredients. Taste and add anything as necessary. Best served as a side on its own or with tortilla chips or with tacos!!! Basil Zucchini1 medium to large zucchini cut into half moons1 large handful of fresh basil leaves2 tsp olive oil½ a small onion1 large garlic clove 1 mild pepperJuice of one lemonSauté olive oil and chopped onions and garlic in pan. Add zucchini and peppers and let soften and crisp up. Then turn off heat and add the finely chopped basil and squeeze fresh lemon.Optionally can add Parmesan and red pepper flakes if so desired.Also for those who asked! I use a @misenkitchen knife, Epicurean cutting board (the best!), and @lodgecastiron steel pan. So basic and affordable but these things have been in our kitchen for a long time!
