They are very easy, and taste similar to carrot cake.Carrot Pineapple Muffins:3 cups of flour1 ½ cups of sugar2 teaspoons of baking soda2 teaspoons of baking powder2 heaping teaspoons of cinnamon1 cup of oil2 eggs2 teaspoons of vanilla extract1 cup of crushed pineapple2 cups of grated carrotPut it all in a big bowl and stir until mixed. Bake at 177°C (350°F) for 20-25 minutes, or until they spring back when lightly poked.Cream cheese frosting is very good on them.I maked them again, very good and easy and it did 30 muffins all together. Not all at once though, I baked a dozen and then a dozen the next day and then 6 a couple of days later. The batter keeps a few days in the fridge just fine. hey @d0nutd0g please do not hesitate to eat muffins, I feel bad about eating most of them myself! -- source link
