Today’s hearty lunch bowl was Korean-style fish soup ramyun. It starts with a nice spicy broth and some generous slices of basa fillet (i.e. Asian catfish from the Mekong River Delta, which actually has a more refined taste and texture than US catfish), into which I basically throw in all kinds of odds and ends hiding around the fridge: young ginger, soft tofu, mushrooms, carrot, hot and sweet pepper, kale, peas, corn, red onion, and of course noodles topped with scallion. The result should be fiery enough to put a good sweat on your brow. Kinda reminds me of the mid-90s when I was working an office job in Koreatown Manhattan and I’d get fish or tofu soup for lunch almost every day, with the metal rice bowl, the long spoon, the ever-changing variety of magical banchan: cabbage kimchi, anchovies, bean sprouts, radish and cucumber kimchi, seasoned spinach, pickled lotus root… -- source link
