caramelised cabbage with broccolian easy side dish to make with unused cabbage from a stir-fry or vegetable couscous. recipe under the cut!ingredients:1 head of cabbage1 small head of broccoli (optional)¼ cup butter or vegan margarine1 white onion, chopped4-8 cloves of garlic, minced2 tsp salt, or to taste1 tsp ground black pepper½ tsp ground cumin½ tsp ground paprika¼ tsp ground nutmeginstructions:1. wash the broccoli and break it off of the head into small florets. wash cabbage, halve lengthwise (from the top through the stem at the bottom), remove the inner core, and slice thinly widthwise.2. blanch cabbage and broccoli by adding them to a pot or wok filled with a couple inches of boiling water, stirring occasionally, for 2-3 minutes. you may need to do this in multiple 3. drain and rinse with cold water to halt cooking. add to a large bowl of cold or ice water for a few minutes to refresh and allow your vegetables to keep their colour (optional).4. heat margarine in a large pan on medium until cold water sprinkled into the pan sizzles. add onion and spices and cook for about five minutes, stirring occasionally, until soft and translucent. add garlic and cook for another three minutes until fragrant.5. add cabbage and broccoli and sauté, stirring occasionally, for about 5 minutes. turn heat down to medium-low and continue to cook for 20-30 minutes until cabbage begins to brown. be sure to scrape the bottom and sides of the pan on occasion to reincorporate the browned bits back into the dish.6. add another pat of margarine and allow to melt. -- source link
