shoku-and-awe: 蔦のカップラーメンを食べてみた // Michelin Starred Cup RamenTsuta is a very popular ramen restaurant in Tokyo that was awarded a Michelin star a few years ago. The lines were out of control, so they implemented a ticket system, but since the tickets tend to sell out by 8am, people got pretty excited when they released an instant ramen.The broth is soy sauce based (but not vegetarian; flavored with both chicken and fish) and contains truffle oil. That was an interesting flavor, but it got kind of cloying after a while. I ended up squeezing a wedge of lemon to freshen it up. The noodles had a great texture, and I was amazed at how lifelike the freeze-dried charsiu and vegetables were, and how well they reconstituted.(And yes, soba sometimes means ramen, not buckwheat noodles (and ramen sometimes means thick noodles that look more like udon), but that’s another post for another day.) -- source link
