I recently discovered my love for baba ganoush. To be honest, I wasn’t quite sure of what it even was! Learn something new everyday! Here’s how I made mine- 1 eggplant, baked juice of 1 lemon 3 garlic cloves 1 cup chickpeas ½ cup olive oil 3 tbsp tahini small handful of fresh parsley couple pinches of sea salt or kelp scrape out the insides of your eggplant and add it to the rest of your ingredients in a blender. Mix till smooth. Tastes best when chilled a bit and add chili powder or hot pepper flakes to spice it up! -- source link
