glowlean: Jerk Portabello Chickpea Avocado Manwich By @caribbeantastebuds Recipe: For the mushrooms You will need: 2 large portabello mushrooms 2 tbs jerk sauce 4 tbs tamari ( or soy sauce) 2 tbs coconut oil Slice mushrooms in 2inch size thickness and add in bowl with other ingredients Turning twice to cover slices in liquid, cover bowl and allow to marinate while preparing the other fillings When ready, heat pan on medium high and add in coconut oil Pat dry the excess liquid from mushrooms and allow to cook on each side for 2 mins or until done. ( the jerk sauce used was of medium thickness, strong taste and very dark, be sure to test yours and adjust if needed) For the Chickpea avocado mash 2 cubs garbanzo ¼ cup diced celery ¼ cup diced red onion ¼ cup diced orange bell pepper Juice of half lemon ( large) ½ avocado ( large) 1 tbs minced parsley 1 tbs minced cilantro 1 leaf kale finely minced 2 cloves garlic Salt to taste 2 tsp extra hot sauce ( optional) Add the garbanzo beans, lemon juice, avocado and diced kale in a large bowl. Using a potato masher, mash ingredients together until you get your desired consistency. Mix in remainder of ingredients For the sandwich Tomatoes Sprouts Dijon mustard Your choice of bread Assemble your sandwich which dijon at base and top if using, a heaping layer of garbanzo mash, mushrooms, tomatoes then sprouts.
