sshsihanaka: Those rice noodle satay cakes from the Yarra valley retreat earlier this year were so yummy. Made with rice noodles, shallots,, coco satay, pumpkin, sesame seeds and fresh chili. Topped with tomatoes, cilantro and mint from the garden. I’ve worked in catering and restaurants since I was about 12 years old. My mother is a fantastic chef and creatress. (If that is a Word?) Its definitely been fun, but what I have been exposed to is an obscene amount of waste in the food industry! The amount of effort, time and energy that goes into catering is inconceivable. If you haven’t worked in this industry, then you probably aren’t aware as to what the scale of waste is…. it’s kind of ridiculous. So it is with great pleasure that I consciously cater for wonderful people; creating food for them and then recreating anything that would otherwise be wasted. I hope to encourage others to be more curious with their leftovers and turn them into something brand spanking new; like these pseudo noodle cake San choi bow-!!!
