iamnotover: Since so many people have been asking, here’s the recipe for a very basic but delicious chicken stir fry. Chilli ginger chicken with quinoa and stir-fried carrot, cauliflower, baby corn and broccoli You will need: Quinoa, chicken breast, baby corn, onion, garlic, cauliflower, broccoli, carrot, extra virgin olive oil, ground ginger, wholegrain mustard, chilli paste. Cook your quinoa according to the directions on the packet. Use ratio 3 cups water for every cup of dry quinoa, and simmer for 15-20 minutes with the lid on. Heat some oil in a pan and add ½ tsp chilli and ground ginger. Stir fry your chicken until it is brown and set aside. Heat some more oil and stir fry onion and garlic. Add your broccoli, cauliflower and carrot and cook for about 5-7 minutes. Add your mangetout and baby corn to the pan, along with about 2 tbsps water and saute. Once all the vegetables are cooked, add 1 tsp each of ground ginger, wholegrain mustard chilli paste. Serve with quinoa and fresh coriander, if desired. -- source link
