One of my favorite easy dinners: Crustless veggie quiche. Sauté a bunch of vegetables and put in the bottom of a buttered baking dish. Top with 6-8 eggs scrambled with a little milk and some S&P. Finish off with a little cheese of your choice and then bake at 375 till done (about 45 minutes depending on how many eggs). This one has tomatoes, onions, garlic, Swiss chard, kalamata olives, and fresh dill!
