Maïs grillé, marché du jeudi, Orange, Vaucluse, 2016.When I first began to visit Europe, maize-corn was considered animal fodder and, except in Italy and some of the poorer parts of Spain and Portugal was rarely used for human food. Over the past couple of decades roasted maize-corn has become a street food delicacy, much as it is in most of Latin America, and is often available from street sellers as with this one at the Thursday street market in Orange.
